Ingredients
24 oz Grape or Cherry Tomatoes cut in ½ lengthwise.
3 Cloves Garlic chopped
3 Tablespoons Extra Virgin Olive Oil
1 teaspoon fresh chopped Oregano
3 Tablespoon Fresh chopped Basil
1.5 Teaspoon Sea salt
½ Cup Grated Parmiggiano
½ Teaspoon Coarse Black Pepper
500g Let’s Pasta Ravioli, Tortelloni or Gnocchi
½ cup Pasta Cooking Water
Procedure
Preheat oven to 375⁰F.
Combine sliced tomatoes, chopped garlic, Oregano and 3 Tablespoons of Extra Virgin
Olive Oil and place on baking sheet.
Roast tomato mixture for 15 minutes. Remove from oven and stir around. Place back in
the oven for 15 more minutes. Tomatoes and skins should look shrivelled when
removing.
Begin cooking pasta in Boiling Salted water
Add Roasted tomato mixture with juices to a medium pot. Add salt, Black Pepper, Fresh
Basil and ½ of the reserved cooking water. Bring to a boil and add strained Desired Let’s
Pasta – Pasta. Add Pasta to Sauce Pot, simmer together for a minute or so, add
Parmiggiano and serve.
